The Rhug Estate’s Bison Grill Bistro has launched a range of new summer menus this week which have been created by Head Chef, Elliot Knox, who has incorporated more homemade vegetarian dishes, new children’s menus, a selection of homemade breads and a wider selection of lighter bites.

Elliot has introduced a new children’s breakfast menu, a brunch menu and extended the lighter bites menu. The seasonal menu has also changed to reflect the warmer weather. For the summer, Elliot has created lighter summer salads, sandwiches and pastas using fresh organic ingredients from the farm and local suppliers.

Rhug Bistro regulars won’t be disappointed to see that regular hearty dishes such as the Welsh Rarebit, Bison Burger and Croque Madame will continue to feature on the Bistro Classics menu.

Elliot Knox has been Head Chef at the Rhug Bistro for over two years. He started in the Bison Grill in 2013 as an Agency Chef and then was asked to join the staff as the Sous Chef. Elliot was brought up in Wrexham and still lives there.

Elliot said, “I enjoy being able to offer Rhug Bistro customers a chance to enjoy fine dining combined with everyday hearty traditional dishes. I have introduced seasonal menus at the Rhug. It is a challenge to satisfy everyone’s appetites but I am happiest when I’m being my most creative as a chef. I’m grateful to Lord Newborough for giving me the opportunity to use my vast culinary knowledge to influence the choices available to our customers in the Bistro.”
