The Rhug Estate’s Bison Grill Bistro will launch its new summer menu later this week which has been produced by Head Chef, Elliot Knox, who has created dishes using seasonal ingredients to complement organic meat produced on the Rhug’s farm.

To celebrate the launch of the summer menu the Bistro will open for longer hours on Saturday, 5 May, so evening diners can explore the new menu and try out the new dishes. The Bistro will stay open until 8.30pm but booking in advance is advised.

Rhug Bistro regulars won’t be disappointed to see that regular hearty dishes such as the welsh rarebit, bison burger and the all-day breakfast will continue to feature on the Bistro menu. For the summer, Elliot has created lighter summer salads, sandwiches and pastas using fresh organic ingredients from the farm or local suppliers.

Elliot Knox has been Head Chef at the Rhug Bistro for 18 months. He started in the Bison Grill in 2013 as an Agency Chef and then was asked to join the staff as the Sous Chef. Elliot was brought up in Wrexham and still lives there.

Elliot qualified from catering college in 2007. Being a chef was not what Elliot had in mind as a career when he left school. Whilst studying a NVQ in welding and fabrication he worked in a kitchen to earn some money and decided after qualifying that he would go back to college to learn how to cook as he enjoyed the fast-paced environment so much.

Elliot said, “I started out in a ‘ping and ding’ kitchen which made me realise that welding wasn’t for me but cooking was. I have learnt over the years how to create amazing food in a short amount of time. I now use all my experience to offer Rhug Bistro customers a chance to enjoy fine dining combined with everyday hearty traditional dishes.”

Elliot continued, “I decided when I took over as Head Chef to introduce seasonal menus at the Rhug. It is a challenge to satisfy everyone’s appetites but I am happiest when I’m being my most creative as a chef. I’m grateful to Lord Newborough for giving me the opportunity to use my vast culinary knowledge to influence the choices available to our customers in the Bistro.”
