Year after year, Lord Newborough admits that their family Christmas just wouldn’t be the same without a large organic gammon joint, smothered in a sweet and delicious glaze.

ORANGE & APRICOT HAM GLAZE

WHAT YOU’LL NEED

  1. 6tbsp of Fresh Orange Juice
  2. 4tbsp of Apricot Jam
  3. A pinch of Ground Ginger

METHOD

Gently heat 6 tbsp. of fresh orange juice, 4 tbsp. of apricot jam and a pinch of ground ginger in a pan for 5 minutes. Evenly spread the glaze all over the ham. Return the gammon into the oven and bake for a further 20-30 minutes until golden brown.

BAKED SUGAR & MUSTARD HAM GLAZE

WHAT YOU’LL NEED

  1. 2 tbsp if English mustard
  2. 2 tbsp of Demerara Sugar

METHOD

Evenly spread 2 tbsp. of English mustard over the gammon. Sprinkle 2 tbsp. of demerara sugar all over the mustard and press it down with your hands. Return the gammon into the oven and bake for a further 20-30 minutes until golden brown.
