  • 8 boneless, skinless chicken thighs
  • 1 tablespoon of olive oil
  • 2 medium onions, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon of flour
  • 500ml chicken stock
  • 2 tablespoons of tomato paste
  • 1 teaspoon of thyme
  • Salt and pepper to taste


  1. Heat the olive oil in a large pan over a medium heat. Add the chicken thighs and brown them all over. Once browned, remove from the pan and set it aside.
  2. Add the onions, celery, carrots and garlic. Cook until the vegetables are softened.
  3. Sprinkle the flour over the vegetables and stir. Cook for another minute.
  4. Gradually add the chicken stock to the pan, constantly stirring
    to prevent lumps from forming.
  5. Stir in the tomato paste and thyme. Season with salt and pepper to taste.
  6. Transfer to your slow cooker, add the browned chicken thighs and stir to combine.
  7. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  8. Check the seasoning and adjust if necessary.
  9. Serve and enjoy!
