Rhug Organic award-winning Beef Cows are born on our coastal farmnear Caernarfon in Gwynedd. The calves are weaned at ten months of age and
then transferred to our main farm at Rhug in Corwen, Denbighshire, north Wales, for finishing. The breed is renowned for its quality and flavour due to high level of
marbling within the muscle. Its ability to finish off grass at around two years of age means we do not have to feed with high levels of grain. Although primarily grass
fed we do supplement the cattle at the finishing stage on our home grown organic cereals. The primal cuts are dry aged for up to 35 days in a purpose built dry aging chamber lined with Himalayan salt. The chamber is fitted with technology to control the temperature, airflow, lighting and humidity. The pink salt blocks lining the wall under the airflow system enhance the dry ageing process by rapidly reducing the humidity and purifying the air creating the perfect environment for the ageing process. This seals in the juices and produces an unique sweet flavoursome meat.
Primarily we sell all meat direct from the farm. Seasonal variations and high demand might impact availability. To ensure consistent offerings, occasionally we source from other certified organic farms upholding our strict animal welfare and sustainability values
