But simplicity doesn’t mean a lack of excitement. Our recipe uses a few key techniques to elevate the natural flavours of the beef. A strategic sear creates a beautiful caramelised crust, locking in the juices and adding a delightful depth of flavour. The addition of simple aromatics like fresh rosemary and garlic complements the natural profile of the beef without overpowering it.

Ingredients
- 1.5kg Rhug Estate Organic Beef Topside Joint (trimmed of any excess fat)
- 1 tbsp olive oil
- 1 tbsp whole black peppercorns
- 2 sprigs fresh rosemary
- 4 cloves garlic, peeled and smashed
- Sea salt flakes
Method
- Preheat the oven: Preheat your oven to 220°C (425°F).
- Season the beef: Pat the beef joint dry with paper towels. Rub the entire joint with olive oil and season generously with sea salt flakes.
- Sear the joint (optional): This step is optional but adds a nice depth of flavour. Heat a large ovenproof skillet over medium-high heat. Once hot, sear the beef joint on all sides for a few minutes until browned. Transfer the seared joint to a roasting tray.
- Flavourings: Scatter the whole black peppercorns, rosemary sprigs, and smashed garlic cloves around the beef in the roasting tray.
- Roast: Place the roasting tray in the preheated oven and roast for 20-25 minutes per 500g (1lb) for medium-rare. Here’s a guideline for roasting time:
- Rare: 20 minutes per 500g (1lb) for an internal temperature of 50°C (122°F)
- Medium-rare: 25 minutes per 500g (1lb) for an internal temperature of 55°C (131°F)
- Medium: 30 minutes per 500g (1lb) for an internal temperature of 60°C (140°F)
Resting
Once roasted, remove the tray from the oven and transfer the beef joint to a carving board. Tent the joint loosely with foil and let it rest for at least 15 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavourful roast.
Carving
Carve the rested beef joint against the grain into thin slices. Serve with your favourite roast dinner accompaniments like Yorkshire puddings, roasted vegetables, mashed potatoes, and gravy.
